Steven Mulrooney is a Research Scientist at the Institute of Food and Health in University College Dublin. Steven was awarded his PhD degree in December 2021, with his thesis titled “Food emulsions: their role in enhancing the stability and bioavailability of vitamin D”. Steven’s research interests lie in the fields of emulsion chemistry, vitamin bioavailabilty, and food processing. In his current research, he is focussing on the use of classification systems for food processing and their advantages and disadvantages from a health perspective. Steven also has experience in both the food and pet food industries.
