Piotr Kubiak, PhD works as an assistant professor in the Department of Biotechnology and Food Microbiology. His main research interests are the properties of novel bioactive food ingredients and the quality and nutritional value of new food formulations. Moreover, he is involved in studies related to the application of microorganisms, bacteria and fungi, in industrial biotechnology and fermentation processes. He is experienced in bioreactor fermentation techniques, selected methods for downstream processing of biotechnological products, gas and liquid chromatography, rheology, and texture analysis.
