Dr. Juan Manuel Castagnini

Dr. Juan Manuel Castagnini is currently a distinguished researcher “María Zambrano” at the University of Valencia. He got his doctoral diploma in Food Science, Technology and Management in 2014 at the Universitat Politecnica de Valencia. Dr. Castagnini’s expertise is related to the development of functional foods for populations with specific requirements through microencapsulation, the revalorization of by-products from the agri-food industry using sustainable extraction technologies to recover bioactive compounds, and the modelling, simulation, and optimisation of agri-food processes. Dr. Castagnini is currently a part of the ALISOST Research Group and the InnAliSostNut teaching innovation group.
