Assoc. Prof. Uri Lesmes is head of the Laboratory of Chemistry of foods and bioactives at the Technion – Israel Institute of Technology since 2010. He gained his degrees from the Technion, his B.Sc. (cum laude) in 2004 and his PhD in Biotechnology and Food Engineering working on nanoencapsulation of nutrients in 2008. To date, he has an h-index of 20, 35 peer-reviewed publications and various recognitions, including past recognition as one of the best PhD students in the field of Food Science and Technology by EFCE and EFFoST.
Prof. Lesmes was a visiting scholar at the Food Microbial Sciences Unit at the University of Reading (UK) in 2005. Between 2008-2010, he was a post-doctoral research fellow (working with Prof. Julian D. McClements and Prof. Eric A. Decker) and lecturer in food technology in the Dept. of Food Science at the University of Massachusetts – Amherst (USA). Then, he returned to the Technion to establish the Laboratory of Chemistry of Foods and Bioactives and head an active research group seeking to link how processing and formulation affect product structure and digestibility; so as to facilitate deliberate and optimal delivery of bioactives to different consumers. Ongoing studies involve a blend of state of the art in vitro digestion models, advanced analytics, novel strategies, a holistic approach to food and a broad network of collaborators; all are orchestrated to facilitate the rational design of orally consumed products towards better health outcomes.
